The hour before service is when a kitchen tells the truth. Labels face forward. Sauce tastes like itself, or it does not. Someone has already decided what will be ready and what will be a problem.
I work as a chef, and I want a place to write about that work without turning it into a performance. The heat, the timing, the small arguments with a sauce, the way a menu becomes a set of promises. Some of those pages will be recipes. Some will just be the night.
Editing a plate
A plate is finished when taking something off would make it worse, not when there is no space left. That is a useful rule outside the kitchen too.
- Taste it before you believe the recipe.
- Salt earlier than your nerves would like.
- Leave one thing on the bench that you were sure you needed.
The recipes on this site are separate from essays like this one. A recipe has quantities. An essay is allowed to be less certain.
